1. "Um den heißen Brei schleichen" means literally "to sneak around the hot broth." It's an idiom that means "to beat around the bush." 2. "sich aus dem Stab machen" means literally "to make oneself out of dust" an idiom that means "to bold", "run away," etc. I think the idea is that one runs away so fast, all that is left is dust.
